Lalume is the elegant white wine from Dominio do Bibei, made primarily from the indigenous Treixadura grape from the Ribeiro region in Galicia. The wine comes from high-altitude vineyards on granite and slate soils and is fermented with wild yeasts, followed by aging on the fine lees in a combination of wooden barrels, foudres, concrete eggs, and stainless steel tanks.
In the glass, Lalume displays aromas of citrus and exotic fruit such as peach and nectarine, complemented by floral notes, fine herbs, and a pronounced minerality. The palate is full and refined, with a beautiful tension between ripe fruitiness, fresh acidity, and a subtle creaminess. The long, clean finish makes the wine exceptionally gastronomic.
